Fieldway Kitchen

Situated in the Fieldway building this project offers training in catering skills in a canteen setting. When appropriate, students are also taught how to use a till and handle money. The training helps students to develop both catering and social skills, at the same time as providing a service to the daily users of the Fieldway site.



Student Training

Fieldway Kitchen students learn to prepare and serve daily main meals, freshly made sandwiches and baguettes as well as soup of the day and desserts. They also are one of the providers of the Vision 21 buffet service.

Students learn to prepare food, use equipment and serve customers as well as gaining experience of basic retail skills.
An Individual Training Plan (ITP) is developed for each student, this includes skills such as:

  • Food preparation
  • Making up sandwiches & baguettes
  • Undertaking, maintain and practice basic food hygiene
  • Setting tables
  • Presenting and serving food
  • Using kitchen equipment proficiently/ oven, microwave, toaster, and others  
  • Cleaning the kitchen and kitchen equipment
  • Defrosting and cleaning refrigerator/ freezer
  • Washing up
  • Maintaining, cleaning and wearing kitchen uniform
  • Using a till and handling money
  • Serving customers

Accreditation

Students in the kitchen are able to undertake NPTC accredited training in catering and related skills. They also undertake their basic food hygiene certificate.

Soft Skills Development

The training at Fieldway Kitchen also delivers the Vision 21 Soft Skills personal development programme. In addition to developing practical catering skills the training focuses on developing confidence, communication skills, self care and presentation, working as part of a team, motivation, timekeeping, behaviour and reliability amongst others.

Health and Safety

Students who attend the Fieldway Kitchen receive a Health and Safety induction including, Food Hygiene certificate, Risk Assessment, Manual Handling and Fire Safety Awareness. Students can also be referred to our TAM project for additional life skills, employment and independent living guidance as appropriate.

To refer a student to Vision 21

Following satisfactory completion of the referral process the student will undergo an induction to Vision 21 after which a ‘taster’ day will be offered to see whether the opportunity suits them. If this goes well students can attend Fieldway Kitchen for one or two days per week, occasionally more if appropriate, for an agreed time scale which will be reviewed regularly.
